Nantucket Granola

Hello ladies! Ok, this is my very favorite granola recipe EVER. It comes from Sconset Market on Nantucket (you can actually find it there or buy it by mail order!) ... or you can just make it yourself. Trust me, it's fabulous. :)

Nantucket Granola

4 cups rolled oats (not quick-cooking)
1-1/3 cups coconut, pref. unsweetened
1-1/2 cups brown sugar
1 cup sliced almonds
1 cup unsalted sunflower seeds
3/4 cup canola oil
3/4 cup cold water
1 tbsp. vanilla
1/3 cup dried cherries
1/3 cup dried cranberries
1/2 cup golden raisins

Preheat over to 325. Combine all dry ingredients (except fruit) in a bowl. In another bowl, whisk the oil, water and vanilla together and pour over the dry ingredients, stirring thoroughly.

Spread the mix on a large baking sheet with sides and bake, stirring every 10 min. or until golden brown, about 1 hr. 20 min. Remove from oven and cool; stir in fruit. Store in airtight containers or freeze for up to two months.

NOTES: I have made this without sunflower seeds a few times. I also use sweetened coconut b//c I can't find the other kind. Also, I don't feel like the baking times are very accurate-- I stir mine every 15-20 min., and let it go considerably longer than the time they specify. I like my granola brown and crunchy, so I just watch it till it looks "done" to me. :)
